Meat-Free-Monday's


Hi everyone and welcome to my blog, "Yummy, Healthy, Easy"!

The aim of this blog is to provide simple, tasty recipes that do not contain meat and could be consumed on #meatfreemondays. Therefore, most meals will be surrounded by veggies and meat alternatives which are great for the mind, body and soul!

The #meatfreemonday campaign is currently celebrating it's 10 year anniversary; with many celebrity advocates such as Paul McCartney, Leona Lewis, Woody Harrelson and many more! The campaign has received an increased bitter-sweet amount of support in the past few years due to the increasing concerns over issues such as global warming. Taking part in a #meatfreemonday has extremely beneficial outcomes for the environment which have been summarised nicely in a chart by the Imperial College Union.

As well as it helping out our planet, having a #meatfreemonday is also beneficial to...YOU!

A study in the US - of more than 15,000 participants - found that those who ate a mostly plant-based diet (whilst not cutting out meat completely) were 42% less likely to develop heart disease than those who didn't. As well as reducing the risk of heart disease, a plant-based diet can also reduce levels of cholesterol, reduce risk of obesity, reduce the risk of Type 2 diabetes and reduce your weekly shop cost!

I am aware that cutting out meat can be quite a daunting experience for those who have never tried it before, or you may have other dietary requirements or allergies that may limit your ability to participate in a #meatfreemonday but I assure you, any conscious effort to reduce your meat consumption is beneficial - no matter how big or small the change you make!

Roast Red Pepper Pesto Pasta #MeatFreeMondayRecipe

Hi everyone, welcome back to my blog! If you read my last blog post you will know that this blog is going to contain a yummy, healthy and easy recipe that you can enjoy tomorrow on #meatfreemonday ! One word - PASTA ! Who doesn't enjoy a nice bowl of pasta? Especially with the cold weather now upon us we need those carbs to keep us warm for winter😆! So, this weeks recipe is a roast pepper pesto pasta dish! This is a super quick recipe as it only took me about 10 minutes to prep and 15 minutes to cook! The measurements I will provide is for 4 people, so why not treat your house to a #meatfreemonday  dinner or lunch! With very little ingredients this recipe is also super cheap as the ingredients include; → Pasta (400g) → Roasted Garlic Cloves (4 cloves) → Roasted Red Pepper (4 peppers) → Blanched Almonds (75g) → Cayenne Pepper Seasoning (1tsp) → Olive Oil (2tbsp) → Basil Leaves (optional) Now for the method....
