Roast Red Pepper Pesto Pasta #MeatFreeMondayRecipe

Hi everyone, welcome back to my blog! If you read my last blog post you will know that this blog is going to contain a yummy, healthy and easy recipe that you can enjoy tomorrow on #meatfreemonday!

One word - PASTA! Who doesn't enjoy a nice bowl of pasta? Especially with the cold weather now upon us we need those carbs to keep us warm for winter😆!

So, this weeks recipe is a roast pepper pesto pasta dish!

<pastaingredients-meatfreemonday-vegetarian-healthy>This is a super quick recipe as it only took me about 10 minutes to prep and 15 minutes to cook! The measurements I will provide is for 4 people, so why not treat your house to a #meatfreemonday dinner or lunch!

With very little ingredients this recipe is also super cheap as the ingredients include;
→ Pasta (400g)
→ Roasted Garlic Cloves (4 cloves)
→ Roasted Red Pepper (4 peppers)
→ Blanched Almonds (75g)
→ Cayenne Pepper Seasoning (1tsp)
→ Olive Oil (2tbsp)
→ Basil Leaves (optional)

Now for the method....

(1) Get your food processor at the ready and add in your roasted garlic cloves (with skin removed), roasted red peppers, garlic, cayenne, almonds and oil. Blend until it makes a nice pesto consistency. Feel free to taste and season if need be. I added in some salt and pepper!

(2) Now that your pesto is made it's time to cook the pasta. Add your pasta to a pot of boiling water and cook following pack instructions. I boiled mine for 10 minutes. Once pasta is cooked, drain and dish on a plate.

(3) Add your pesto on top of the pasta and add some fresh basil for garnish. The basil is an optional addition and does not have to be added.

And that's it! As easy as that!
