Sweet Potato Grill Platter #MeatFreeMondayRecipe

Hi everyone! Welcome back to the blog! This weeks recipe is all about keeping things super simple - I'm not even sure if you can call this a recipe it's that easy!

As you will be aware by now, the recipe will be vegetarian so you can enjoy it on #meatfreemonday! A veggie staple for me is sweet potato and so here is how to make a sweet potato grill platter!

Now let's get to the ingredients!
<ingredients, platter ingredients, vegetarian recipe ingredients, meat free recipe ingredients, sweet potato, cauliflower, mushroom, healthy recipe>- Cauliflower
- Pepper
- Mushroom
- Sweet potato
- Beetroot burger
- Coconut oil 'frylight'
- Cajun seasoning

The method;
- Place all items on a tin-foiled tray and spray with coconut oil.
- Season with cajun spice
- Grill at a medium heat for 20 mins; remembering to turn the burger half way through
- Enjoy!

The photo above shows a portion for two people that you can use as a gauge for portion size!

Now, I was extremely sceptical about trying a beetroot burger as I am not a massive beetroot fan. However, it was extremely tasty! If you're not a lover of beetroot and are not willing to try it then Aldi sell amazing vegetarian sausages. I have attached a photo so you can keep an eye out the next time you are at the shops!

And that's it for this week!
<aldi vegetarian cauliflower sausages, vegetarian sausages, healthy sausages, meat free sausages, healthy alternative, meat alternative>Tune in next Sunday for my last blog post on #meatfreemonday meal inspo!
